Truffles

Truffle is one of a type of subterranean mushroom (Tuber) whose fruiting body can be found at depth of 10 to 20 centimetres. It is therefore a painstaking job to find them in their natural habitat. Specially trained dogs have to be used to sniff them out and the pickers then unearth them carefully. The Istrian white truffle (Tuber magnatum Pico) belongs to the most precious and highest quality truffles in the world. The gourmands agree that truffle is the pinnacle of gastronomy, but have not yet agreed whether it is a food or a spice.

Teran

Teran is an old Istrian type of wine produced from the Teran dark-skinned grape, which was the most widespread variety in this region at the beginning of the 20th century. Teran was mentioned as early as 14th century, when in 1390 it was given as gift to the emissaries of the Viennese court. The wine is characterized by a ruby-red colour, a relatively high acid content and a slightly sour finish. It is full-bodied and with a high polyphenol content, Teran is considered to be a therapeutic wine. It is best served at room temperature.
